Gelatin process

Gelatin is made from animal skin and bone through more than ten processes. Classification, soaking, degreasing, neutralization, hydrolysis, filtration, concentration, drying, crushing and so on. It is a tasteless, translucent, granules or powder.  I will introduce more information about gelatin usage and process as below.For production process, there are acid method (A type), alkali method (B type), and a very few adopt enzymatic method.

Gelatin shapes

Gelatin has no fixed structure and relative molecular weight.  Degrade by collagen in animal skin, bone, muscle membrane, muscle membrane and other connective tissues, then to become white or light yellow, translucent, slightly shiny flakes or powder; Gelatin is a colorless, odorless,  transparent and hard non-crystalline substance. It can soluble in hot water, insoluble in cold water, but can slowly absorb water, swell and soften. Gelatin can absorb equivalent weight 5-10 times the water.

Usage of Gelatin
